Martha Lampman's Chicken Cacciatora
Ingredients
- ¼ cup olive oil
- 3 pound chicken, cut up
- 2 medium onions, cut on 1/4 inch slices
- 2 cloves garlic, minced
- 1 1 lb can (2 cups) tomatoes
- 1 8 oz. can seasoned tomato sauce
- 1 tsp salt
- ¼ tsp pepper
- ½ tsp celery seed
- 1 tsp crushed oregano or basil
- 2 bay leaves
- ¼ cup cooking wine
Instructions
- 1 Heat olive oil in skillet; add chicken pieces and brown slowly, turning once.
- 2 Remove chicken from skillet. Cook onions and garlic in oil until tender, but NOT brown.
- 3 Combine remaining ingredients, except cooking wine.
- 4 Return chicken to skillet with sauce mixture, cover and simmer for 45 minutes.
- 5 Stir in cooking wine. Cook uncovered, turning occasionally for an additional 20 minutes or until fork-tender.
- 6 Remove bay leaves and skim off excess fat.
- 7 Serve with rice, well-buttered noodles or spaghetti.
