Martha Lampman's Chicken Cacciatora

Ingredients

  • ¼ cup olive oil
  • 3 pound chicken, cut up
  • 2 medium onions, cut on 1/4 inch slices
  • 2 cloves garlic, minced
  • 1 1 lb can (2 cups) tomatoes
  • 1 8 oz. can seasoned tomato sauce
  • 1 tsp salt
  • ¼ tsp pepper
  • ½ tsp celery seed
  • 1 tsp crushed oregano or basil
  • 2 bay leaves
  • ¼ cup cooking wine

Instructions

  1. 1 Heat olive oil in skillet; add chicken pieces and brown slowly, turning once.
  2. 2 Remove chicken from skillet. Cook onions and garlic in oil until tender, but NOT brown.
  3. 3 Combine remaining ingredients, except cooking wine.
  4. 4 Return chicken to skillet with sauce mixture, cover and simmer for 45 minutes.
  5. 5 Stir in cooking wine. Cook uncovered, turning occasionally for an additional 20 minutes or until fork-tender.
  6. 6 Remove bay leaves and skim off excess fat.
  7. 7 Serve with rice, well-buttered noodles or spaghetti.
